The State of Mexico is the most populous state of the country (15 million), which extends around the capital. Gastronomía

Green Chorizo

Sausage made with entrails of pork, beef, chicken or turkey, and named after the color given by certain local plants. When served, include purslane, spinach, quintoniles, carrots, potatoes and turnips.

If you find yourself in this region do not forget to try this dish of lamb, rabbit or chicken meat, usually cooked wrapped in maguey leaves in a hole in the ground.

In Toluca survives one of the sweetest traditions inherited from the colonial era. You cannot miss trying duchesses, tamarind balls, jemmies, chongos, among others. Coconut candies, oranges, pineapple, among other fruits have been prepared in Toluca for over 120 years.

Small maguey worms extracted from harmful plant pests have become a treat for adventurous palates.
