Under the motto “Without molcajete, it’s not sauce”, the Pueblo Mágico of Comonfort is recognized for its artisans impressive work creating molcajete (stone mortar), in which you’ll find an infinity of shapes and pieces of volcanic stone.

To learn more about its process, we recommend you live the experience of its manufacturing in one of the workshops taught in town.

During your visit you’ll learn how the more than 200 artisans, located in rustic mines, work under makeshift roofs armed with bags and sticks. Listen to the tools pounding on the stone that gives shape to molcajete.

It’s worth remembering that molcajete is one of the most representative utensils in Mexican cuisine, and in Comonfort the stone for making them has feldspars or salt minerals. This provokes a physicochemical process—when grinding the ingredients inside molcajete with the tejolote (pestle), it’s released a micro dose of these salts, giving a very peculiar flavor to the food.
