One of the most representative gastronomic events is the traditional barbecue contest that had its origins 48 years ago. The date of July 8 was chosen, the day on which the city of Actopan was founded; that day it is said that the Augustinian friars organized a kind of macro baptism or massive baptism with the indigenous people of the region, hence the date of the foundation of the town of Actopan. This fair devastated all the forecasts, since all the activities were a success.
It is worth mentioning that, in this area of the Mezquital Valley region, specifically in Actopan, the barbecue is made with firewood from the mesquite tree, maguey stalks and is covered with palm duffel, which undoubtedly give it that unique flavor of « the Actopan barbecue ».
People in this region use to eat it in the morning, as breakfast or lunch, many say that it is very good for raw. At parties it is a tradition to taste it at meals, and some people dare to serve it even at dinner. In the first years of the contest, visitors to the city attended, with very elegant clothes, a formal dress, a bowler hat, a luxury cane, and patent leather shoes. The ladies, very well dressed in a casual outfit.
In recent barbecue contests, the Actopan Pueblo con Sabor Committee joins in to innovate the selection and qualification process. As well as the assignment of juries and the participation of the Secretary of Tourism of the State.
Our beautiful municipality has the state emblem "Pueblo con Sabor" that means that we are a town in Hidalgo, which enjoys prestige in food preparation, we stand out for traditionally preparing one or more typical dishes and we have the development of emblematic products of the state.
