Villahermosa?s culinary influence comes
from traditional recipes handed down from Mayan and Chontal
cultures. Among the many delightful dishes you can try in Tabasco
is pejelagarto, an exotic species that has the body
of a fish and a lizard-like snout; it lives in the rivers of Tabasco.
It usually comes accompanies with a delicious salad. Other traditional regional
fare includes tortas de iguana (a sandwich with
iguana meat), pan de platano (banana bread), tortilla
de coco (a regional sweet bread), sweets made of papaya and chocolate, and a
beverage called pozol, made from corn dough and
ground cacao.
