Tepoztlan?s culinary tradition is based on the typical ingredients used in Mexican cooking, such as chili, corn and mushrooms. Over time came the integration of Spanish influences and new ingredients were added to local fare, including wheat and red meats. Today, you?ll find such dishes as mole verde de pepita (green mole made of pumpkin seeds) and mole rojo de guajolote (red mole with turkey), tlacoyos de haba y frijol (tlacoyos with fava beans and refried beans) and pambazos rellenos de chorizo (sandwiches with Mexican sausage). Other dishes include itacates (corn gorditas topped with salsa, cream and cheese) and the famous cecina de Yecapixtla (a salted meat dish served with cream, cheese, beans and avocado). For dessert, don?t forget to try the various flavors of the tepoznieves (ice cream with fruits, nuts, tequila or mezcal).
