regional dishes capture the
essence of Colima?s diverse cuisine, incorporating delicious fish and seafood
recipes. Among the most notable dishes are: regional ceviche
prepared with ground sailfish; tostadas with grouper or
sierra fish and chile; tatemado and chilayo,
dishes prepared with pork backbone;
caldo michi, a stew
made with white fish; and sopa de mariscos (seafood soup). To wash
it down, you can try unique
local beverages, such as tejuino, a drink made from fermented corn, ice and lime; bate,
made from sage seeds and often
accompanied with cane honey; and
Comala and coconut punch. For dessert, we
recommend that you try alfajor de coco y piña (regional pineapple
and coconut cookies).
