Guadalajara?s rich culinary tradition is the result of a combination of colonial and pre-Hispanic influences. Of the many dishes you can enjoy are beef tamales with red and green hot sauce, pozole, birria de chivo and ternera (goat and veal stew), sopes and gorditas (made from corn dough) filled with potatoes, beans, cheese, meat or chili pepper strips. But the most popular food made in Guadalajara is the torta ahogada, a roll filled with pork, beans and onions and bathed in a mild tomato-based sauce and a very spicy chili sauce.

 

Among the region?s typical beverages are café de olla (Mexican coffee) with cinnamon or brown sugar; plain, vanilla and strawberry atole; tepache, an alcoholic beverage made from pineapple and sugar; tejuino, a fermented corn drink; fruit-flavored water; and the traditional tequila. For dessert you can choose between buñuelos (fritters), candied pumpkin, sweet potatoes, custard jericallas and Mexican rice pudding.
