The delicious cuisine of Aguascalientes stands out for its variety and delightful flavors. Among the regional dishes you can try are the chiles Aguascalientes, sopa campesina (a local soup) and lomo de la abuela (a pork loin dish). You?ll also find a fair share of traditional Mexican fare, including pozole (a hominy dish), barbacoa de olla (baked lamb), mole, tacos dorados (fried tacos) and biznaga (cactus), piñon (pine nut) and nuez (walnut) tamales. For desert, you can indulge in the ladrillos (a flaky pastry), condoches (cornbread) and a regional sweet prepared with guavas from Calvillo. In addition, don?t forget to try the region?s best red and white wines, such as the Chardonnay, Cabernet Sauvignon and Merlot.
