Arroz a la tumbada
A typical dish from the state of Veracruz, Arroz a la Tumbada, or “Tossed Rice,” started as a poor man’s meal in the fishing town of Alvarado and became one of the finest dishes in some of the best restaurants around the world.

• Vanilla originated in Mexico and was taken to Europe by the Spanish conquistadors in the 1520s.
• Mayans chewed gum (chicle) from the sapodilla tree thousands of years before other civilizations thoughts of this confection. Chicle is still used in natural gum manufacturing today.
