ROASTED GOAT KID

INGREDIENTS (for 6 servings)

1 goat kid (18-22 days old)

250 gr (8.75 oz) lard

6 oranges, freshly squeezed

garlic salt

For the sauce:

1 TB lard

1 onion, finely diced

6 serrano peppers, diced

4 tomatoes, seeded and diced

½ cup beer

1 bunch of cilantro, loosely chopped

salt to taste

PREPARATION

When you buy the kid, ask for it to be cut into pieces with the spine separate. Clean and dry the pieces so that it will be easier to grease them with the lard. Then dip them in the orange juice and sprinkle with garlic salt. Place them on a tray and cover with aluminum foil. Bake at 250°C (480°F) for 2 hours until the meat is tender, and then remove the foil and allow them to brown slightly.

In the meantime, prepare the sauce.  Melt the lard and sauté the onion, eventually adding the peppers, tomatoes, beer and salt until well-flavored. Remove from the burner and add the cilantro.

To serve, arrange the meat and sauce in an earthenware casserole dish with flour tortillas and salsa on the side.
