In Tampico you can try a wide variety of dishes made mostly of fish and seafood ingredients. Among the local favorites are jaiba rellena de huitlacoche or flor de calabaza (crab stuffed with Mexican corn truffle or squash blossom), robalo en escabeche, empapelado or chimichurri (bass prepared in a vinegar-based marinade, wrapped in foil, or prepared in a chimichurri sauce), pulpos enchilados (spiced octopus), empanadas de camaron (shrimp turnovers), seafood and rice dishes and grilled prawns. You also can enjoy a delicious regional meat dish, known as carne a la tampiqueña, which is prepared with aged cheese or served with beans and black mole enchiladas with tamarind.
