Coahuila has a wide variety of
dishes that contribute to Coahuila?s rich culinary
offering. Among Coahuila?s specialties are meat
dishes, such as choice cuts, pork rinds and dried meats. You also can try gorditas de carnero (mutton gorditas), fritadas (choice cuts
of fried beef or young goat, accompanied with flour tortillas). Another tasty
regional treat is pan de pulque, bread made of flour,
eggs, sugar and pulque (a fermented alcoholic
beverage extracted from the maguey plant). In addition, you can indulge in
fruit liqueurs and walnut empanadas. For dessert, the city offers fruit rolls,
pine nut pudding and glorias,
made with goat?s milk, walnuts and vanilla extract.
