The surrounding
areas of Pachuca are known for their
delicious culinary offering. In this region you can enjoy pastes, turnovers stuffed with potatoes, leeks, chicken, beef, pineapple, or other ingredients.
Other local favorites are barbacoa de carnero, lamb
wrapped in maguey leaves cooked in underground pits; steamed mixiotes, spiced
chicken, rabbit or lamb wrapped
in maguey leaves; and pre-Hispanic delicacies
such as ant roe and red maguey worms fried in butter and accompanied with salsa.
