Durango?s cuisine is characterized
by the use of all kinds of meats as the main ingredients in such dishes as caldillo, which is made with dry meat and red chiles, and red pipian or patolesdurangueños, made with
white beans and pork. You can accompany your meal with a glass of wine or mezcal. Other local favorites include the famous Mennonite
cheeses, pan con jalea (bread with a jelly spread)
and cajeta de membrillo
(quince sweets).
