GASTRONOMY
Thanks to its wide array of dishes, Yucatecan cuisine is among the finest in Mexico. The culinary influences
come from Spain,
pre-Hispanic societies and other cultures that have resided in the Yucatan Peninsula region. In the city of
Valladolid, located 45 km
(28 mi)
east of Chichen Itza, you
can enjoy traditional fare, such as turkey in sak-kol or in escabeche oriental (a spicy marinade), longaniza ahumada (smoked sausage), and cold cuts
made from pork and spices. You can also try the typical pork loins, made with
tomatoes and Serrano chili peppers and accompanied with fresh handmade
tortillas.
