This unique gourmet experience in San Miguel de Allende begins when you walk across the threshold of the hotel door from where you will be taken to the town of Jalpa, located just 20 minutes to the northeast of the city, to reach the majestic Purisima de Jalpa Hacienda, dating back to 1730, and where wheat was formerly grown, which was then sent to the silver mines in Guanajuato. Today, it has been fully restored and turned into an organic farm, where Rosewood has a plot assigned to its crops.
Tour the hacienda together with chef Palma. Don’t be surprised if he suddenly cuts one or two flowers, asking you to eat them, lose yourself in the experience and you will see how all your senses come to life while trying to guess what you are eating. The chef will tell you what you should harvest and, together, you will return to San Miguel de Allende.
Once you have returned to the restaurant, chef Palma will start working in his kitchen, where, together with the ingredients from Purisima de Jalpa he will celebrate in each dish the authentic Mexican flavors. Taste a grouper Tiratido with a side dish of guacamole, red onion pickled with serrano chile and tangy lemon juice, a Red Snapper Popiet with potatoes standing in salt, accompanied by a risotto and roasted mushroom sauce.
