Aguascalientes cuisine is facilitated by the area’s fertile land, which produces garlic, chili, alfalfa, corn, beans, grapes, peaches, and guava. These foods are widely used in the region’s cuisine, lending traditional dishes wonderful colors and flavors.

Several dishes top the Aguascalientes culinary tour including: the famous San Marcos style chicken, prepared mainly during the San Marcos Fair; stuffed gorditas; roast suckling pig; Aguascalientes-style chili; sopa campesina, country style soup; puchero stew; salsa ranchera; Aguascalientes-style mole, a rich chili and chocolate sauce; chicken in a wine sauce; and roasted goat.

Aguascalientes is also famous for its high-quality wines, which have earned an international reputation. A glass of good Aguascalientes wine is the perfect accompaniment to the local culinary fare, which can be savored in the city’s restaurants.

For lovers of sweets, good dessert choices in Aguascalientes include: ladrillos, flaky pastries; condoches, a type of sweet cornbread; and guava conserve, the area’s most traditional dessert, made with fruit grown in the town of Calvillo.
